Halloumi Cheese

Halloumi the traditional white cheese of Cyprus, has been produced on the island for centuries. Halloumi is a semi-hard cheese has a pleasant and luscious flavour and is delicious when grilled or fried. The Halloumi cheese can be enjoyed alone, but it is also very tasty in sandwiches. As a starter , grilled Halloumi is superb with salad and dressing . it is equally tasty at the start of the day , with ham and eggs. This cheese is also a key ingredient for a splendid  meal  of Cypriot  Ravioli and is perfect on all sorts of pasta. Alternatively , it can be served grated on pizza, in soup or in a roll, making it a cheese of almost endless variety. Yet, whatever you decide to do with Halloumi, it always retains its shape and texture.

flaouna pastry-cyprus

Flaouna

Flaouna is a traditional pastry unique to Cyprus,  which was customarily baked especially for Easter. Both the size and taste may vary. Flaouna consists of Halloumi chesse and is usually offered during parties and social events. This pastry is prepared in different ways across the island, ranging from salty, to semi-sweet or sweet. Another way of making Flaouna is with Anari cheese.
