1 kg tangerines
1,5 kg sugar
2 cups tangerine juice
Juice of one lemon
Wash the tangerines and peel. Slice the peel very finely or place in a food processor. Place the peel in a deep pan and add 1 cup of sugar and stir for 5 minutes. Add the remaining sugar and place in the fridge overnight. Add the tangerine juice and cook on a very low heat for 30 minutes. Add the lemon juice and cook for a further 5 minutes. Place the marmalade in jars and seal.
